Fillet Steak with Asparagus Puree
Serves 4
Ingredients
drizzle of oil
4 fillet steaks
salt and freshly ground black pepper
For the asparagus purée
4 cooked new potatoes
16 asparagus tips, blanched
salt and freshly ground black pepper
handful of fresh basil, shredded
Method
- To make the asparagus purée, place the cooked potatoes and asparagus into a food processor.
- Add the seasoning and herbs and blend together until smooth.
- For the steak, heat a little oil in a non-stick frying pan and pan-fry the steak for 3-4 minutes on each side, or according to personal taste.
- Spoon the asparagus purée onto a serving plate and serve the steak on top. Serve with new potatoes
