Fillet Steak with Asparagus Puree

Serves 4

Ingredients

drizzle of oil
4 fillet steaks
salt and freshly ground black pepper
For the asparagus purée
4 cooked new potatoes
16 asparagus tips, blanched
salt and freshly ground black pepper
handful of fresh basil, shredded

Method

  1. To make the asparagus purée, place the cooked potatoes and asparagus into a food processor.
  2. Add the seasoning and herbs and blend together until smooth.
  3. For the steak, heat a little oil in a non-stick frying pan and pan-fry the steak for 3-4 minutes on each side, or according to personal taste.
  4. Spoon the asparagus purée onto a serving plate and serve the steak on top. Serve with new potatoes
